Culinary Capers Sweet Summer Splurges

July 6, 2012 By

Summer is here and without a doubt this year’s trend for Culinary Capers Catering’s desserts is the threeDs - Downsized, Deconstructed, and Dessert Flights.  Petite desserts are going strong for west coast summer entertaining – we love them because they are a perfectly elegant bite (or two!) of fruit decadence and almost guilt-free.

Dessert Spoons have layers of delicate flavours in one-bite.

Dessert Flights are an affordable luxury for those who want a showstopper at the end of the meal.   Here is a Summer Trio Dessert with lime pot de crème with honey tuile; raspberry lemon shortcake; shot of local BC rhubarb and vanilla bean panna cotta.

Traditional comfort made new again.

Sweet Cones- We love them because they are pretty, yummy, versatile and easy to eat.  Nothing says summer more than petite cones.   They are the perfect size whether you want to sample different flavour combinations or just want a small bite of decadence.  Miniature ice cream cones  that come in three cone flavours – strawberry, vanilla  and chocolate - topped with your choice of four house-made ice cream flavours in vanilla bean, dark chocolate, strawberry and caramel.

Macaron mania  is still going strong but we’ve re-imagined different ways to present our house-made colourful delights such as filling them with fresh berries, vanilla bean crème diplomat and a dusting of lustre to add sparkle.

Petite Fours - we have ampted up these bite-sized tiny cakes with Italian buttercream and adorned with white chocolate edible flower.

Whimsical Classics
for the kid in all of us that never goes out of style such as pink cotton candy,  house-made marshmallows and fresh BC berry white chocolate pop tarts.

Here is a sneak peak for Fall…Canelés – If you haven’t had one of these delicious little gems you haven’t lived. A pastry native to Bordeaux, France, are poised to be the new new cupcake.  They’re the perfect confection: crispy and caramelized outside, soft and custardy inside.

Shooting Magazine Editorial

July 1, 2012  |  Blog, Gordon S Cooper Photography, Guest Post  |  No Comments  |  Share

I’ve been asked to post information on how to shoot editorial for Perfect Wedding Magazine. The reality is this information should be used to shoot any image, whether it be fashion, commercial products or scenery but  you need to remember the one golden rule: shoot loose!

Shoot Loose

is a term I use when explaining to other photographers how to crop photos. It is so important that there is enough ‘extra’ space around the image so the image can be adjusted and cropped for the page size. These days I see many new photographers shooting images full frame, meaning their ‘works of art’ are shot by composing exactly what the see in their viewfinder as the final crop – edge to edge to edge to edge.

I can tell these photographers to compose a shot to use as an 8×10 and I bet most of them won’t have any idea of how to compose for this finished size format.

A lot of the time I have to recreate backgrounds and edges for the images shot by other photographers just to fill the page without chopping off the top or bottom of the photo, just because it was shot too tight.

I’ll be posting more info on the different aspects to consider when shooting for a magazine, so check back soon.

Sincerely,

Gordon S. Cooper
Photographer, Art Director and Editor for Perfect Wedding Magazine

Ganache Patisserie’s New Spring-Summer Dessert Lineup

May 10, 2012  |  Blog, Ganache Patisserie, Guest Post  |  No Comments  |  Share

Vancouver, BC – Ganache Pâtisserie is pleased to announce its newest creations for this year’s Spring-Summer 2012 menu. Pamplemousse Litchi et Rose ($5.95) surrounds a lychee-rose water cremeux centre with a bittersweet Campari parfait, blood orange madeleine sponge and lychees.  As the Concorde Framboise goes on hiatus for the summer, it inspires a new version of the classicGâteau St. Honoré.  St. Honoré Chocolat Framboise ($5.95) takes the classic construction of puff and choux pastry and fills them with dark chocolate raspberry mousseline and a layer of moist chocolate cake while a crown of fresh raspberries encircles a bed of vanilla chantilly cream with a chocolate-dipped profiterole on top.  Pistache Matcha Cerise ($5.95) combines a pure pistachio mascarpone cream with layers of lemon-yuzu ladyfinger sponge and a central core consisting of a matcha cheesecake and morello cherry gelée. Dacquoise aux Caramel et Poire ($5.95) offers a multilayer foundation of maple pecan dacquoise banded with salted caramel mousseline and spiced pear ganache while spiced poached pears decorate the top.  An evolution of a new classic, Mille Crêpe Praliné($5.95) layers delicate vanilla crêpes with alternating vanilla and praline pastry creams and a textural layer of praline crunch.

On Saturday May 12th, 2012, everyone is invited to our Yaletown location for the official launch of our Spring/Summer 2012 menu. Throughout the day, there will be samples of our newest desserts, draws for doorprizes and much more.

The entire menu, store hours and all contact information can be found online at www.ganacheyaletown.com and on our Facebook page.  Or just visit Ganache at 1262 Homer Street in Yaletown to see our entire selection of chocolates, cakes and treats.

Del Sol Photography ~ The Underwater World

April 3, 2012  |  Blog, Guest Post  |  No Comments  |  Share

We are often asked by our clients to come up with ideas and we keep trending towards the water to play with our imagination. In our latest project, we have embraced Sol’s childhood fantasies and dreams and have started shooting mermaid sightings staring my lovely Sol as the talent :) .

Swimming in cenotes is always a challenge because its a bit cold, around 62 degrees… I have so much respect for Sol to be able to swim with this mermaid outfit and do it at depths of 5 -8 feet and for some distances. WOW, what a challenge! In the end, we are lucky enough to find water where the visibility is good enough and the setting fits just right so there are mysterious orbs floating around us and rays of light radiating downwards. I think the light beams become an extension to the outside world bridging our fantasy world with the real world.
